Does anyone know where in the WDW site (or this one for that matter) I can find information about personalizing selected WDW restaurant menus?

I am specifically looking to do this for CRT.

Are you talking about them printing Happy B-day or Anniversary on it?? If so, I've heard any non-character TS restaurant can do this but so far can only confirm Coral Reef does it for sure. You call the restaurant not WDW-dine.

Maybe someone else can help a little better......

1) Any non-character table service restaurant can give you personalized menus.
2) They just type your name into the computer and reprint the menu.

We got these at Yachtsman Steakhouse without requesting them. We just noted on our ADR that it was our anniversary and the menus saying "Happy Anniversary Mr & Mrs...." were waiting on our table for us when we arrived.
