I sooo love this stuff and I was wondering if anyone has a recipe for making it. I am thinking it can't be that hard...then I would be able to give it as gifts too. Thanks!
 
My coworker makes this every year, and I love it, so this year I asked her for the recipe, here's what she does.

Melt 1 bag semi sweet choc chips and spread in the pan. Allow to set up most of the way.

Melt 1 bag white choc chips (you can add a little peppermint oil if you want), and spread on top of the semi sweet chocolate. Wait until just starting to set, then add crushed peppermint candy canes to top, and allow to finish hardening.

I bought a bag of the ghiradelli peppermint bark, it was just ok.
 
I would recommend buying good quality chips. I bought the white bark last year, which tastes fine on pretzel rods, but didn't make a good peppermint bark. One tip for crushing the candy canes really fine is to double bag in a ziploc, wrap a dish towel around it, then pound with a hammer.
 

The sample of Peppermint Bark at Williams-Sonoma is very good. However at 26.00 bucks it is a bit pricey.

I would certainly try to make it at home.
 
Yum, thanks for the tips so far. I think the combination of white & semi-sweet chocolate is key. I have seen bark with just white choc and it isn't as good, IMO.

I love the Williams Sonoma bark but am not willing to pay that price for it. :goodvibes I've bought it a few times after the holidays on clearance.

I've had this recipe bookmarked for a while and hopefully I'll get it made one of these days.

Peppermint Bark

8 ounces high-quality semisweet chocolate, broken into pieces
2 teaspoons canola oil, divided
1/2 teaspoon peppermint extract, divided
8 ounces high-quality white chocolate, broken into pieces
25 peppermint candies, crushed
Directions
1.Lightly grease a 9x9 inch pan and line with waxed paper, smoothing out wrinkles; set aside.
2.Place the semisweet chocolate and 1 teaspoon of the canola oil in the top of a double boiler over just barely simmering water, stirring frequently and scraping down the sides with a rubber spatula to avoid scorching. When the chocolate is melted, stir in 1/4 teaspoon of the peppermint extract. Pour the melted chocolate into the prepared pan, and spread evenly over the bottom of the pan. Sprinkle half of the crushed peppermints over the chocolate layer. Refrigerate until completely hardened, about 1 hour.
3.Place the white chocolate and the remaining 1 teaspoon canola oil in the top of a double boiler over just barely simmering water, stirring frequently and scraping down the sides with a rubber spatula to avoid scorching. When the chocolate is melted, stir in the remaining 1/4 teaspoon peppermint extract. Pour the white chocolate directly over the semisweet chocolate layer; spread evenly. Sprinkle the remaining crushed candy over the top and gently press in. Refrigerate until completely hardened. Remove from pan; break into small pieces to se

See now in our family, no one will touch it if it has the chocolate layer. It's gotta be the white chocolate only.

Interesting! I sometimes find white chocolate alone a bit over-sweet or cloying, so semi sweet cuts that. I guess that's why there are different kinds of bark!

I just put candy canes in the food processor and mix them in with the melted white chips or almond bark. So easy. I love the stuff.

I love peppermint bark. I had always bought it at BJs, but when I went there today, they didn't have any. :(
 
I tried the recipe princess momma posted! It was really good, and really easy! The white chocolate was harder to spread, it seemed thicker. But it was a successful first try! Kind of hard to break apart too...any tips on that?
 
Thanks for the recipe. My daughter loves Peppermint bark but I'm with the other poster....26.00 at Williams Sonoma is just a bit too pricey for us. I might try and make some of it this week. Thanks

Yay! :thumbsup2 I'm glad you like it.

I think when I make it I'll make the dark chocolate layer without the candy (I think that's how the WS bark is :confused:) and then it might be easier to break. I have a friend who makes hers in those silicone mini muffin tins and just pops out the bark when it's hardened. They're so pretty too! Personally, I've run out of room in my cupboards and won't be buying any more muffin tins. :goodvibes
 
Well, it's all gone so I guess the family liked it too! ;)

Maybe less peppermint chunks will make it easier to break, I ight try that next time. I did find it really hard to break apart, and some of the peppermint on top would come off when I was manhandling it to get it broken. More experimenting needs to be done!

If any of you try it, let us know how it comes out and what you might do differently.
 
I had peppermint bark last night for the first time and it was absolutely delicious, but I was the only one who liked it.

I melt one bag of milk chocolate chips and pour it out on wax paper on a cookie sheet, Then I melt a half a bag of white chocolate chips and drop blobs of it over the milk chocolate and use a knife to drag through it and create swirls. Then I sprinkle crushed starlight mints all over the top and stick it in the fridge til it hardens. Then break it up and serve.

No one I know really likes white chocolate all that much and probably wouldn't care about it if it didn't have the milk chocolate layer on the bottom with just a touch of white chocolate.

Do you keep your bark stored in the fridge afterwards? I would like to make up a batch that could be mailed but Im afraid it would melt because of it setting up in the fridge.
