Before I go out and buy $1200 worth of disney gift cards at Target, I will be able to call and apply the gift cards to my room only reservation before check in, correct?

Yes, but, as you mentioned, you will have to call. You cannot make payments against a room only reservation online.

Yes you will! I just did this for our trip we took in June. I got an automated system I could punch in my info most of the time, but I got a CM a few times and they had no problems.
