I thought I remember reading at some point that Magic Kingdom had added a new counter service restaurant that had different pasta stations, but I can't find anything about it. (Or am I just confusing this with the one that they have at Disneyland)?

I think you might be thinking of the trial idea for El Pirata y el Perico Restaurante.

They also used to have something a little like this at the Land in Epcot - at least for the kids' meals. you could picka pasta, a sauce, and maybe a meat...

The QS at POR had some pasta choices and sauce choices...not really a pasta bar though...

There is also the Fresh Mediterranean Market at the Dolphin, which is set up with stations.
As you visit each one, there is a list of available items.
The food is then made FRESH for you, to order. I'm not sure if they have a pasta bar though.
