Castaway Cay is part of the Bahamas nation, so even if they did offer it, it would only be the Bahamas stamp, which you would get in Nassau if you dock in the port there also and wanted to seek it out in the yellow customs tower. There aren't really customs officials on Castaway, since the island is part of the Bahamas. There are people who do check IDs on your return to the dock before you get to the towel return and water pick up, but they don't check you 'onto the island'. It would be like asking for a passport stamp at your local airport (provided that it isn't a hub like Atlanta, NY, LAX where international flights land).
You can try the post office, but again that is a postmark and doesn't really belong in your passport book. (Though I totally get the wanting a momento!)
