This actually has nothing to do with Disney... I am starting a new job in a few weeks, and there is a chance I will have to visit the company's office in the UK, so I will need a passport. I've never had one before.

I have the application, and it says I will need proof of US citizenship - in particular, my birth certificate.

I have a birth certificate, but just one. My question is - do they keep it? Or do I just show it when I submit my application (which I was going to do at the post office)?

They take it at the post office and submit it with your paperwork. When you get your passport in the about 4-6 wks in the mail, your original passport will be inside the envelope.

I got a passport 2 months ago. I made a copy of my birth certificate and kept it for me, they want the original. I got my passport and birth certificate back with no problem. I made a copy and the girl who took my info asked if I had a copy just in case. So just in case make yourself a copy.
