We are a party of three and I see much better times for parties of 4. If I book 4 and only 3 show up, what happens?

I can't speak for the places that require full payment in advance (like CRT), but at the other venues, just tell the CM at check-in how many people are now in your party. You won't be charged the penalty unless no one shows up for the ADR. It's a pretty well known quirk here on the Disboard that the system tends to favor even numbered parties. So groups of three often have better luck selecting a party size of four.
 
Thanks, Figment. What about other character dining like Crystal Palace. Would they give you a penalty for the one person not showing up?

They shouldn't. The cc-guarantees at non-full-prepaid restaurants is an all or nothing type of deal. So, as long as someone shows up in general, then you shouldn't be charged.
 
You can try booking online as a party of 4 and then call the dining line. If you get a good CM, they can amend your reservation.

When making the reservation you have to link your resort reservation # if you want to use dining credits rather than prepay the full amount. You will still have to leave your credit card info as a cancellation guarantee, but nothing will be charged unless you fail to cancel before the deadline and then don't show up at the restaurant. The same system is in place for the dinner shows (Hoop De Doo, luau, Mickey's Barbecue).

When the online system doesn't work, you can call the dining line to make the res.
