My family is headed to OKW for our first time in May as owners. My DD 21 may have her boyfriend come with us but he might not be there the whole 8 nites. If he arrives a few days later than us can he still use ME from MCO? Or ,of course, if it's the other way can he leave via ME if leaving early?

Yes to both questions. You will need to make separate (from the rest of your party) ME reservations for him - MS can help you with that when/if it becomes necessary.
