Does anyone know if we can purchase separate protection on theme park entry tickets?

Thinking realistically - if we purchase tickets now and then another covid outbreak happens, Disney won’t reimburse us the park tickets if we decide not to go.

Are there any insurance or coverages from other companies we can buy to protect us?
 
The tickets may be covered by travel insurance protection -- you would need to read the fine print of the specific policy because policies vary so much. I know many people ran into issues for things like airline tickets even with travel insurance because the airlines offered a credit and therefore the insurance didn't kick-in (or wouldn't kick-in until after the credit expired). Since WDW tickets always hold a credit value, that would be something to confirm very specifically with the insurance provider before purchasing.

Another option may be to book a WDW package (tickets + room). I believe those were handled differently during the pandemic because people were able to cancel the whole reservation.

If you buy your tickets as part of a WDW "room & tickets" package, you can cancel the whole thing (within a reasonable time before your trip dates) and get a refund from Disney.

And, even if the WDW room costs a bit more (compared to other options) you'd likely not pay much more than attempting to purchase a "trip insurance" policy.

Disney is really flexible about letting you get a credit for tickets and then apply that credit to the purchase of new tickets. Unless you think you will never go to Disney again, insurance isn't needed for the tickets specifically in my opinion.
