Park hopping?!?

Just back from our first trip to the MK and am already planning another for January '10! I'd like to do the MK again and eat a late breakfast at the castle (for my birthday) and I'd also like to do DHS since my boys are really into the Cars character, Star Wars, Handy Manny, etc. I was planning on purchasing tickets for 2 days in the parks (one in MK, one in DHS), but I'm wondering if it's a better plan to do the park hopper option so if we wanted we could cruise over to Epcot or Animal Kingdom. This might be too much with two young children, and we do live only 2 hours north of Orlando so this isn't a once in a lifetime trip. Thoughts?
 
Why not purchase annual passes? I don't know much about the cost but living so close, I'm sure you could get your moneys worth in no time!
