Yes, that’s my thought. My concern is Epcot will be much harder to book if Harmonious and Ratatouille are open.

That's possible. As for the first few days that Ratatouille is open, I wouldn't be surprised if Epcot is fully booked in advance and not eligible for park hopping. In that case, unless you booked it before it "sold out," you might not get in anyway.

I’d be surprised if they allow hopping to Epcot for the first days Ratatouille is open, so probably doesn’t really matter on those days.

I'm more of thinking in the weeks and months after it opens. Epcot may reach DHS/MK level of popularity if Ratatlouille and Harmonious are open, basically the only new stuff from 2020-2021 in all the parks.
