Going with My DW and Family for 7 days. The plan is to go to each park but not with park hopper tixs. Arriving on Sat in orlando around 1pm. Staying in clermont at a house. Figure Disney Springs Saturday late afternoon/early evening. Sunday DW and I will hit up DHS from 9-2 and then go enjoy Father’s Day. After that I could use some suggestions on what days to hit the other parks. Want to have one down day to relax and Fri will be a relax day till 5 when we have reservations at Be our Guests.

The one thing that jumps out at me is that a lot of people on here will use the term "relax day" for a day without park tickets. If that is how you are using it, you should be aware that you will need park tickets to go to Be Our Guest.
 
Yes, Be Our Guest is in the Magic Kingdom, so you will be in the park at least part of that day.

It would be helpful to know what your family consists of (kids, adults, how old are kids, will all be going to parks together) and when will you be in Orlando. For most of us who plan, the dates are pretty important.
 
We have park tickets for the evening we are going to Be Our Guest. We will be there in mid June from Saturday to Saturday. For MK and AK it will be myself, DW, DD(9), Mother and in laws. DHS it’s just myself and DW. Epcot will be myself, DW, and brother and sister in law.
 

I would buy 7 day tickets. After about 5 days the cost per day is minimal. You don't have to be in a park all day. Our last trip we had 8 day tickets for an 8 night stay. About half the time we slept in and we still got to do every attraction we wanted. FP+ makes it easier since you can show up later in the day and still be able do a high-demand attraction. Doing it this way we never needed a rest day. This also allows you to enter a park just to go to a restaurant if you like.

Although easywdw no longer does detailed park day calendars the old ones give you the reasoning on why you do certain parks on certain days.

We have rented a house with a private pool so my daughter would kill me if we did t have a day where we did the pool most of the day with her grandparents lol so the rest day is a must! We bought 5 day tickets
 
I think that's plenty of time to get in some good park days without hoppers, really not needed for a stay that long. We have been in the parks the last three years in June around the first full week and last trip was mid June. Our kids get out of school early, the crowds are there but it's not insane, it does vary from day to day but I would avoid MK on a weekend and try to hit it on a Thursday if you can. Look at the schedule of park days and see which days the park you're visiting will have extra magic hours or late evening hours, those are always nice to attend. Lighter crowds in the mornings and late evenings. Those are times we can get in long wait rides pretty fast. Check out some of the different disney blog sites about tips for scheduling your FP+, there is some good info on there that can be helpful. Also, I'm sure that the people you're staying with will be aware of this but traffic in/out of orlando is usually heavy throughout the day so make sure you factor that in to your arrival/departure time from the parks.
