There are five of us, two adults and three kids.

Some of the rides hold four people.

Even though our kids are older, can we do the parent/rider swap where I go with the three kids, come out and then the kids get back on immediately with Dad?

On rides that hold more people (some roller coasters), will they allow us to squeeze three people into a seat if we can fit? DS9 is pretty small.
 
Do the kids all meet all height requirements? If so, you almost certainly won't be able to do rider switch (baby swap). The point of the switch is so that a shorter kid waits with an adult while the family goes on, then the waiting adult can go on (with up to 2, I think, other people) quicker, without having to wait in the entire line, while the adult stays off with the shorter kid.

With coasters, from what I recall, only Big Thunder Mountain has a bench seat with one bar restraint.

Matterhorn, only 2 allowed in each car (one between another's legs). Indiana Jones, 4 or 5 across, each seat with their own seatbelt.
Space Mountain, 2 side by side each with own restraint.
Splash, no restraints, the back seat can hold two smaller people or an adult and a tiny kid side by side, but the rest of the log is one in front of each other, with a padded seatback between each person.

Grizzly, one big raft, one person per seat, each with own seatbelt, but it fits like 8 in the ride at a time.

Mulholland Madness, never been on it, but from what I hear it's 2 side by side each with a restraint (used to be one bar restraint but I hear that's changed).


Things like Monsters Inc, Dumbo, Casey Jr, Pooh, etc, where there's just one bar or a big belt or no restraint, you can squeeze, but I'll tell you, the more people in your seat, the harder it is to see everything! Especially for the person in the middle!


All of your kids are old enough to ride (even line up) alone, and if you just tell the CM in charge of seating that you're altogether, they shouldn't put you on completely different parts of the ride. CMs have told us to tell them "x and y" for the separation in our party, since we generally split up the adults, and our 4 year old goes with whatever adult he chooses. (obviously not on the big coasters, LOL) So we say 2 and 1 or 1 and 2. Or on IASW and POTC, 3! :)
 
To add to this question, we'll be there with the grandparents and a 1 year old and 3 1/2 year old. Can we swap out 2 adults at a time or can only one wait with the baby and then swap when the other 3 (plus the three year old) get off?
 
Just one can wait out with the baby. They give you a pass that, when you're done sitting out with the baby, it lets you on with one other rider to accompany you (maybe it's 2 others on some rides? I'm not sure, though).

We also had 2 adults, 3 kids. When we had to, we went 2, 2 and 1. Usually one of my older kids sat right behind a parent who was seated in front with the littlest one.

On Haunted Mansion, Doom Buggies are big enough for 2 bigs and a little on one seat. I also rode Mr. Toad with 2, dd5 and dd10. Tight squeeze, though.
 

Im not sure I understand the problem...you can either just have 1 adult and two kids in one seat, and the other adult and other child in another seat together if you need to split up. Or one adult with one child, two children together, and one adult alone if its a two seater ride.

A lot of times you can have 2-3 people per seat as long as you fit. And sometimes they won't make you fill up every single seat in a row if its not too busy (say if a row can fit 4, but theres only 3 of you) Most likely no one else from another group will want to split up from their group to ride alone in your row anyway.

Usually parent/child swaps are if you have one child who is not tall enough to go on, one parent takes the older kid, then other parent can go back on with the kid again. Or if neither kids are tall enough, one parent goes while the other sits with the kids, and then the other parent gets to go on the ride when they get down.
 
Our family of 5 has never had a problem splitting up for rides. Usually either my oldest dd goes by herself, or one of the parents sits alone and two of the older kids pair up. Never an issue once everyone was tall enough to ride everything.
