We loved parasailing at Castaway Cay, it was beautiful.
They will give you a time to meet at the dock and you'll be on a boat with a total of 10-12 people. Typically you ride tandem and you spend about 10-15 minutes total in the air, including going up and coming back to the boat.
Unfortunately this excursion does get cancelled often because of high winds. I do highly recommend it.

Per person, although both times I've done it I've been tandem.
Two things:
1) Don't forget cash if you like tip-these guys are contractors so you have paid them but some people like me are compulsive overtippers-I forgot the
first time and fortunately it was early in the day so ran back to the ship and got more cash
2) If you wear glasses or sunglasses consider one of those strappy things to hold them on your head. I just wear cheap sunglasses in case I lose mine (never have) but DD missed seeing things her first time b/c she didn't want to lose her glasses so it was just 10 min (or so) of blue blur.
I hate heights and have enjoyed it twice. My mother has done it once at age 62.
