I have found salads to be a good option. I got a really good fish and vegetable dish at Skipper Canteen. I also like the chicken broccoli salad at Columbia Harbor House. Some places might let you sub out rice, pasta, or quinoa for vegetables. I would just look at the menus and see what you can do. There really are not particular places that are better, just places that are worse, like Italian or Asian food. I tend to cheat when we go to WDW, because it gets to be difficult. I do like to get some hard boiled eggs for a quick protein injection, especially for breakfast. Good luck.
