Just finished our 10-day stay......
We
snacked at Paddlefish - it was very relaxing, but the few things we sampled were 'mixed' in quality. However, sitting outside and atop the riverboat was the real treat. Service was lovely and accommodating.
We
dined at Boathouse - it was certainly a more hectic environment, and our food was well below expectations (given all the rave reviews).
The filet sliders were tough (at best). The $16 firecracker shrimp that were baby 'popcorn-sized' seemed like a lousy value. $4-oysters were not discounted for the dozen we had (that means $48/dozen

). As to service - the ribeye listed as being for 2-people arrived with only one plate and it took 5-minutes for another plate to arrive. They also allowed a non-service dog into the main dining room (I own three dogs), and I was not the first person to be annoyed as this untrained pet repeatedly begged for food.
Best meal we had in Disney Springs was at Homecoming, but it is pricey for fried chicken, etc.
Since we are planning our next trip with folks who enjoy seafood, we are leaning to Boathouse at the moment....because they live in fried chicken country.....
Luckily, we also enjoyed Shula's & BlueZoo - both are better than Paddlefish & Boathouse.
