When we've been to WDW, I usually carried one backpack. My daughter would carry a fanny pack around her waste for her "things". Usually I could get her to carry a waterbottle in that.
In my backpack was usually a water bottle per person. If we were going to a character meal, I'd bring the autograph stuff. If rain was in the forecast, the ponchos (usually, I could fold the 4 of them to fit in a gallon sized ziplock bag). And single sized snacks like fruit snacks, cookies, etc. Something that I could hand out and then throw away. Then in another plastic bag rides my money, and the camera. That's about it. If it wasn't supposed to rain, or we weren't going to a character meal, that would all stay in the hotel room. So usually with warm weather would just be waterbottles and snacks.
When my son was little and required diapers, usually only 2-3 diapers and the travel wipes. Again, it would fit in the ziplock bags. Keeping the stuff in their bags was a great way to stay organized, and I didn't have to be digging in the bottom of that bag too much.
I guess we just travelled lighter than most....
