Any recommendations for type/brand/size of purse to wear at all times (i.e. will go on the rides)? I'm thinking the backpack will have snacks, ponchos, extra clothes, etc. but don't know what's best to keep the things that won't stay with the stroller.

Pretty much any size purse will fit on the rides, small backpacks too. Just don't leave any valuables with your stroller.

I have this bag in another pattern. It looks way bulky in this picture because they must have it stuffed to the max, but in reality it's not that bulky. The pocket on the upper right there is perfect for a cell phone (even with the massive case I have on mine). I've never had any trouble fitting it with me on a ride or into the pockets on rides like Soarin or Space Mountain.
 

I use one of the smallest Disney Vera Bradley crossbody bags. Just big enough to hold my phone, money and cards, and maybe one or two other small things. Just the thins I absolutely wouldn't want to leave behind.
 
I use a small baggalini cross body bag with several zippered compartments an RFID protection in a water resistant fabric.
 
We used a backpack last time, because we had sweaters and a small blanket due to the unpredictable December temps. I bought a smaller sling type backpack for next year from Academy. I don't want to lug the backpack around next time. It wasn't heavy, but it got annoying after a few days.
 
I use one of those athletic sling/cinch bags. The one I have is fairly large with various zipper compartments and elastic water bottle holders on the side. I have carried a lot and very little and it works on all Disney rides. I got it st Kohl's
 
I carry a Eagle Creek backpack to evenly spread weight over my two shoulders. Since I already have an Eagle Creek hidden waist belt for overseas travel, I sometimes use it for my cash, credit cards and park tickets if I am wearing a loose, untucked shirt.

I would NOT leave a backpack with your stroller. Folks leave a few things of little value in a stroller - maybe a crappy extra blanket, an extra box of wipes, sippy cup, but leaving a full backpack is not a good idea. Just take as little as you can in general - use the backpack as your purse and diaper bag - and take it with you in lines and on rides.
 
What time of year are you going? Where are you staying? How old is the little one? I started going with my son was almost 3 so no stroller for us and no extra clothes. We always stayed at the MK resorts when he was small (just because at the time they were the only resorts on site) and if he got too dirty for words (he was a boy after all) we just went back to the resort and changed. I carried a small bag with a little pack of wipes, a little zip lock bag of goldfish for him and the usual wallet and that was it. I was a single mom and no way was I going to be a pack mule as well as try to keep up with an active little boy. You'd be surprised how little you can get away with. If your little one is in diapers, obviously, you are going to need a little bigger bag but really if you are staying on site, you wouldn't need more than 2 or 3 diapers since you can always go back to the room.
