Package with DDP vs Room only w/ DDE card

I have a ressie made for sept 15-18 @ ASMo MYW+ Free dining for 4 people

my mother would like to join us (she wasnt on the original ressie) so if she would like to come we would have to either book a second room and pay for dining and tickets for her OR do this:

Book a room @ POR with the new September code for $114/ night
Buy Florida Res Seasonal Pass for 2 adults and 2 children ( I have an AP)
purchase the DDE card and pay OoP for dining ( we have Resies @ Ohana, Akershus, & Chef Mickeys) these are all buffet meals..so we would have to pay for BOTH childred correct?

In the end, if we do go the second route about how much do you think we would spend for food ? Also does the DDE card give discounts on CS meals as well?

DDE allows CS at SOME locations.
I have used DDE at any food court I have been to -- except Pepper Market.
I don't recall the DDE being accepted at any CS in the parks. I don't think even Earl of Sandwich accepts DDE (although they did when they first opened).

According to the latest DDE listing, Counter Service discounts are available ONLY at: (1) The Value Resorts food courts, (2) Sassagoula at POFQ, and (3) four locations in AK - Tusker House, Pizzafari, Flame Tree and Breakfastasaurus.

The ASMU now have a suite available - sleeps six.
We stayed in one our first night of our most recent trip (June).
It was comfortable and might be worth checking into as an option for you.

I would call MS and ask them what your options would be IF someone joined your party. See if they are making any allowances. You can't be the only one this is happening to.
