I'll do the Disney hotels. I miss having a free breakfast, however!
Only if you have concierge service, which at the Grand Californian costs a goodly amount over and above your regular room rate. Like $100 a night or something like that. That gets you access to the concierge lounge on the 6th floor, which is stocked with snacks and beverages all day long.
If money weren't an object, I'd stay at the GHC. It's truly wonderful.

I'd say both GCH and DLH are great. There reasons to stay at both :
GCH:
- close proximity to the parks w/ a private entrance to GCH
- the darkwoods and finishings are beautiful
- it has a great ambience
- if you're exhausted, its a short walk back to the hotel
- the restaurants are great
- the room views are great if you reserve them
DLH:
- its less expensive
- the pool is amazing
- goofy's kitchen is in the hotel
- the koi pond is beautiful
- if you get on the right tower and a higher floor you can see fireworks.
NO FREE BREAKFAST at the Grand Californian?! I guess I'm so used to having the free breakfast thrown in at most of the cost-efficient (cheap!) hotels that I assumed it'd be available at the Grand Californian. We go next week!

I just received our hotel confirmation in the mail yesterday. They broke down the cost of concierge for each hotel: $100 per night plus 15% bed tax at PPH, $125 per night plus 15% bed tax at DLH, and $150 per night plus 15% bed tax at the GCH. These may be a better rate because I am using the fall special to book. But it is a considerable difference. It probably wouldn't be worth it for us until our kids are much older.
