We're going May4-9.
Just called today and here's what I got:

4-Kona dinner
5-Coral Reef dinner
6-Whispering Canyon dinner
7-Liberty Tree Tavern character dinner
8-*now Princess Storybook breakfast*

They had California grill on the 8th during Wishes, but it was real late for my kids. (wishes at 10pm)
I'd like to do one fancier dinner one night, like a show or something, but wasn't sure if California Grill would be best. I don't want another buffet, and ds doesn't like character meals, though I think he'll like Liberty tree because I know he likes Minnie and Goofy.
DD really wants a princess meal, but of course CRT is booked, and 1900 Park Fare didn't sound like something my kids would enjoy too much.

Update--the 8th is now the Princess Storybook breakfast aka Akershus

We're going May 21-25 - I don't have anything but a cruise during Illuminations....gotta get started!
 
California Grill isn't really a great place for kids, if I were you i'd try to book one of the dinner shows (like you said).

Hoop-Dee-Doo Revue is a great family dinner show at Fort Wilderness (can take a boat from Magic Kingdom if you lack a car) featuring lots of jokes, singing, and dancing! The menu is all-you-can-eat comfort food which everyone enjoys :)

Chef Mickey's is another great place which you can visit for Breakfast or Dinner and is a buffet with all the Disney characters who visit your table during your meal! Its located in the Contemporary which is convieniently on the Magic Kingdom monorail.

We did Akershus Royal Banquet Hall in Epcot for a princess dinner...A+ for this one. My daughter has a hat and sweatshirt signed by Belle, Jasmine, Cindy, and Aurora. They were great with the kids and the food wasn't bad either.

Fancy dinner check out Narcoossee's at the Grand Floridian. Time it to see the fireworks from MK from the veranda...they pipe in the music, too!

You might enjoy the Princess Storybook Dinner (at the Akershus Royal Banquet Hall in Norway at Epcot).

Princess Storybook Dining - A family style American breakfast is served at the Akershus Royal Banquet Hall in the Norway Pavilion at Epcot and features Disney Princesses and Friends. Hours are: 8:30am to 10:10am Most likely characters: Belle, Jasmine, Snow White, Sleeping Beauty, Mary Poppins. Lunch and Dinner are Norwegian style dining with characters (including the occasional visit from Ariel in her gown).
 
And ds says he is afraid of the princesses. He's almost 6 years old. He had a traumatic experience with the Little Einsteins and Jojo & Goliath this fall and doesn't want to be bothered by characters while he is eating. <sigh>
But I mentioned dining with the princesses to dd (almost 3) and she is mad that we can't go TODAY!
