Well, we did some looking around online and were going to give the shower rod/wire shelf thing a try but worried about it staying upright and the ease of putting it up and taking it down. Ultimately, we decided to go another route.
We bought this small 3-shelf unit - it's 2 feet wide about 3 feet tall. Big enough to provide space, but small enough that we don't even need to take it apart. It can sit on the floor of the camper in front of the fridge and stove when it's closed!
DH even got some extra hooks and rigged up a paper towel holder to hang off the side near the sink!
Then DH had the idea that a couple of over-the-door hooks could hold up another small shelf unit on the outside of the bathroom wall.
I think between those and the hanging cubes we put up on the other end from the ceiling bar, we should have enough room now to have stuff out and accessible while remaining neat and organized.
