We are all different, but I would definitely build in some rest days

The only thing I would say is, depending how late you plan to stay at MNSSHP, you might want to allow yourselves a chance to have a rest/nap that afternoon.

You haven't allowed any rest days but, presumably, you know your own pace.

Other than that, it looks pretty good

I agree with Miffy. You need rest days, especially if you have children in tow. If you really must go to a park every day then consider doing some half-days to lighten the load a bit.

I would have some rest days or shopping days, also you could consider doing Busch Gardens from St Petes.

Looks fine to me. I don't do rest days either so as long as you know you can do parks non stop you will be fine.
