Our flight to Orlando arrive about 5 pm. We will be using Magical Express, so I will estimate that we won't see the interior of the WL lobby until 6:30 or so....

Seeing as it will be a Saturday night, and not wishing to use up one of our 7 days on one of the parks that night... is it possible for us to get on the boats or buses to get to the monorail and find a nice place for dinner at either one of the resorts or DTD without having to actually enter any of the parks?

Has anyone done this? Any good ideas? Perhaps a place where we might see fireworks? Anyone? Bueller?

Take the boat to the MK and get on the hotel monorail to take you to the Poly for dinner at Ohana. Depending on the timing, you may be able to see fireworks! A great start to your vacation.
 
I second twocat. This is our favorite way to start at Disney. Find out what time Wishes is and make an 'Ohana ressie 2 hrs earlier and ask for a table by the windows (you'll have to wait, but you would have built it into your timing). Alternately, you could plan to finish dinner a little earlier, and then watch Wishes from the Poly beach. Other great dinner choices could be Chef Mickey's at the Contemporary, or I think there is still a princess dinner at Grand Floridian, or Whispering Canyon at WL. Our favorite is 'Ohana. All of these will get you in the "Disney mood" without entering the parks. After wishes take a ride full circle in the monorail (ask to sit up front). We have done this our last few visits and it really has been a great start to the magic.
 
Our last trip we arrived around 5:00 and had ressies for 1900 Park Fare for 6:30. Because of the timing-we didn't have much time to look around the hotel when we first got there and sort of rushed to take the ferry, then monorail-we felt like we cut it close.

If you stayed at the WL, you could go to WCC or Artist's Point and still see the Electrical Light Parade (9:45 pm??) wihtout feeling rushed...but we did love Ohanas...
