I was in Vegas the first week of March last year for my first trip. Here is what we did that I really enjoyed:
1) We rented a car for one day (less than $30, plus gas) and drive out to Red Rock Canyon National Park (about 30 minutes). It was SO nice to get away from the hustle and bustle of the Strip, and the park was just gorgeous (being from the Maritimes, the lack of trees in the desert fascinated me!). We also popped into some outlet malls as wel as Target (a must-do for me on any trip to the US).
2) The bus system- I believe it's called the Deuce- is an EXCELLENT value. For $5, we got a day pass that gave us unlimited access to practically the whole Vegas bus system. We stayed at the MGM Grand, and took the bus from there to Freemont Street and a mall, and then did a bit of touring...well worth the money.
3) The lunch buffet at the Golden Nugget was the best Vegas food I ate all week, and by far the best value. It was under $10, and the food was very fresh and delicious. If you go, I suggest either an early (before noon) or late (after 2pm) lunch; we got there at about 11:30 and the place got really packed with conventioneers a little after noon.
4) It's really fun to gamble, but if you have the time, just take a day and stroll along the strip and through the resorts/casinos. They are so beautiful; since the Strip is constantly changing, it's neat to look back at your pictures from years past and see how much the Strip has changed.
If you haven't decided where you're staying, I can definitely reccommend the MGM Grand. My friend found it for $69/night, and it was honestly one of the nicest rooms I've ever stayed in- well worth the money. Here is a pic (sory it's so big!):
