Other activities that I may have missed

Husband and I will be going to WDW in october ( no kids). This is our second time going back in october -love the mickeys halloween party fireworks and epoct food fest! I did have to slightly twist hubbys arm to make WDW our vacation this year. This is our third time overall and he wants something a bit different but could not offer any ideas, so Disney it became.
So question is; what have I missed that we need to do besides the typical theme park visits? Are their any special tours or good places to go for adults? Way back in my college years, I lived in orlando and did seasonal work at WDW so I know all about the tunnels, backstage areas,etc thus a backstage tour is not needed for me. I am a horse person so wondering where, if any, the carriage rides are or if you can take a horse out for a ride around Disney property. I know about the horses at The Grand Cypress just outside Disney ( worked there for a year too) but never research if Disney had horse 'rentals'. We love pleasure island but again wondering if there are any special attractions that are hidden from the standard Disney vactioner.

Disney does not rent out horses - the only riding available on property is at FW and it's a walking-only trail ride. It'll be boring for an experienced rider - I did it once and saw some deer, but probably won't do it again.

Carriage rides are located at FW and the PO resorts in the evening - did the one at FW years ago and found it very romantic.

One of my favorite night activities is Jellyrolls. It's a dueling piano bar on the Boardwalk - 21 and over, $10 cover charge. I always have a great time here.
