OT-Need diabetic friendly recipes

My DH was recently diagnosed diabetic. For the pass month, I've been spinning my wheels trying to find foods he could eat. I make the same thing over, and over again. Fish, chicken breast, vegetables, and salad. I find myself running to the store to get fresh fruits and vegetables every few days. I find my grocery bill up about $50.00 per week. For a treat I buy sugar free cookies, which are about twice as much as regular cookies. I have not yet tried baking sugar free. Iam hoping that my fellow Disers could give me some good recipes that the whole family would enjoy. Thank you!:thumbsup2

I know just what you are facing bc I was just diagnosed myself. It didn't come as much of a surprise since it runs in my family. Nonetheless, I have to make changes in what and how much I cook. Has your husband been advised to attend any nutrition classes? I started taking them last week, and it has been a real eye opener and alot of help. I've had to rethink my eating habits. I've been advised to count carbs, but don't count them out all together, and to balance them with protiens. I would first suggest checking into the classes. Mine are offered at the local hospital. If it's just recipes you are after, I've seen some on the American Diabetes Association site, and also at www.Acu-Check.com

This is a salad my aunt used to make that is really good and low cal. She always made her dressing with Equal and it tasted great.

Make a green salad using ingredients your family likes. Put some deboned chicken pieces on salad and sprinkle with some sliced almonds. I like broiled chicken breasts (cooled) chopped up on my salad.

This is a really good dressing that is diabetic friendly.

Alice's Dressing
3/4 cup sugar or 18 pkg of Equal
1 tsp dry mustard
1 tsp salt
1 TBS onion juice**
1/3 cup cider vinegar
1 cup salad oil
1 1/2 TBS sesame seed or poppy seed
Mix and chill.
** you can buy onion juice at Wal*Mart or the grocery store, in the spice section. Or make your own squeezing an onion through cheese cloth.
 
Salad dressings are a challenge... that sounds good, I think I'll try that tomorrow..off to the store again..:rolleyes:
 

www.splenda.com There are also some very good websites out there with very good recipes an ideas for those with diabetis I haven't looked at recipes for awhile not since I got my new puter so I can't give urls for those.

A couple months ago I baked a sugar free black raspberry cake oh it was even low fat as well....

Also most any recipe that calls for sugar you can cut the sugar in half without loosing to much flavor the main exception is candy it does not work well when making candy.

Cornstarch used for thickening does not have as much fat or carbs as regular flour
 
There are several good diabetic cookbooks out there too.

What kinds of foods does your husband/family like? Meat and potatoes type people are a little harder to please.

My favorite cookbook is American Medical Association Diabetes Cookbook. I only wish it had more recipes in it...all are very flavorful (at least the ones I have tried...my favorite being the Thai Shrimp)

There is also a cookbook series by the author JoAnna M Lund....here recipes are plentiful, but I like mine with a little more flavor...but a very good investment for a diabetic since all her books have plenty of recipes.

I think that you will still find that you spend more money at the grocery store *depending on where you live) because you are going to be buying a lot more fresh (not prepared) food. But, if you spend some time doing some meal planning (always the issue for me) you can certainly cut expenses.

Thanks for the book ideas. We're pretty much a chicken family, and only chicken breast, no one likes any other part of the chicken.:confused3 So the meat and potatoes are not an issue. But we've been finding out that carbs are in everything, even fruit and veggies. Were learning alot from this experience. Iam going to look up those books when I go to Borders. Thanks again!
