OT- Cooking Corned Beef??

Ok, every year I have the same issue, how to get the corned beef started while I'm at work- Thinking about trying the crock pot this year- problem is, I have 3 corned beefs & potatoes/carrots & cabbage, how do I fit that all in there?? HELP!!
 
I don't have an answer for you, but for some reason I didn't even think to cook the corned beef in the crock pot while I was at work...that's a great idea!
 
If I were in your shoes, I'd put most of the corned beef in the crock pot with a small amount of veggies for flavor, but cut off a small section to cook on the stove with the rest of the veggies when you get home.
 
I do mine in the crock pot every year. It comes out delish!
the other option that my mom does is cooks it in her pressure cooker...you would have to do it in several batches with having so much corned beef. But its very good and a huge time save to do it in the pressure cooker.

I always cook my Corned Beef in the Crock Pot. It all goes in.... the beef, carrots, red tatoes, onion, maybe a parsnip and a bottle of Irish beer. I cut up the cabbage and put it on top about 3 hrs. before serving.

The next day I chop up a bunch of and put it into a skillet with another heavy skillet pressing down on top of it to make the BEST hash ever. MMmmmmm

The problem? Thought I was being all cool going to the butcher this year to get it. I said oooh.. don't you have FRESH and not that PACKAGED stuff? Sure.. 5 lbs left.. I'll take it!

Ok so.. the packaged stuff? That's corned beef. I got beef brisket. So to make it into corned beef, I have to do things over a week or so to it. So... we're having a very oddly seasoned beef brisket this year that's been soaking in irish beer and pepper and meat tenderizer since Monday :(
 
I do mine in the crockpot all the time. I don't know how you'll fit all of that, but I have found that putting the cabbage and carrots on the bottom and corned beef on top (fat cap up) is the best. I do the potatoes in the oven.
 
I cook only the meat in the crock pot, at the end of the day I take the meat out, rinse it and refrigerate it over night. The next day it is easy to remove any of the fat that is still on the meat. Then I make a brown sugar and mustard glaze , brush on the meat and bake for about a 1/2 hour until heated through.

I boil everything else together while the meat is in the oven.
