Oohh it's so hot! Cool recipes for summer days?

It's just too warm to be in the kitchen...can't even bring myself to eat anything too hot. Can't barbeque everyday...would anyone be willing to share some "cool" recipes for when the temperature soars...can't live on cucumber salads and sangria much longer!!!;)

I have a good frozen dessert recipe!

1 Pkg. oreo cookies
1 Stick butter
1 Jar caramel ice cream sauce
1 Jar hot fudge sauce
1 gallon vanilla ice cream, softened
1 large container cool whip


Melt butterin 9 x 13 pan. Crush oreo cookies. Mix about 2/3 of the crushed cookies with the melted butter for form a crust. Put the caramel on the crust then spread the ice cream on top of that. Put in freezer until the i.c. hardens. Then put on the hot fudge sauce and cool whip. Sprinkle with the remaining oreos and freeze until you are ready to serve.

This is a very rich dessert.

BCAMom...that's an understatement!:) Sounds to-die-for...but how on earth do you keep fron eating the ingredients separately until you get the chance to assemble this treat?;)



Oh I thought of a good one...gazpacho! Just found this recipe...haven't tried it so can't vouch for it..sounds good though.:)


Ingredients

1 3/4 pounds ripe tomatoes
1 large cucumber, chopped
1 green bell pepper, chopped
2 cloves crushed garlic
1 tablespoon finely chopped black olives
1/3 cup white wine vinegar
1/4 cup olive oil
1 tablespoon tomato paste
2 1/2 cups water
1 small onion, chopped
1 green bell peppers, diced
2 green onions, thinly sliced
1 large cucumber, chopped
2 hard-cooked eggs, chopped


Directions
1 Score a cross in the base of each tomato. Cover with boiling water for 1 minute, plunge into cold water, drain and peel away the skin. Chop the flesh so finely that it is almost a puree.
2 Mix together the tomatoes, 1 of the chopped cucumbers, 1 of the chopped green pepper, garlic, olives, vinegar, oil and tomato paste, and season to taste. Cover and refrigerate for 2 to 3 hours.
3 Use 2 to 3 cups of chilled water to thin the soup to your taste. Serve chilled with the chopped onion, green pepper, scallions, cucumber, boiled egg, herbs and croutons served separately for diners to add to their own bowls.
4 To Make Garlic Herb Croutons: Preheat the oven to 350 degrees F (175 degrees C). Cut two 1/2 thick slices from a loaf of bread (your choice). Remove the crusts and cut each bread slice into 16 cubes. In a bowl, mix together 3 tablespoons olive oil, 2 crushed cloves garlic, 1 tablespoon chopped fresh oregano, 2 tablespoons chopped fresh thyme, 1tablespoon chopped fresh rosemary and a pinch of chili flakes. Add the bread cubes to the herbed oil and toss until all the oil has been absorbed. Lay the bread cubes in a single layer on a baking tray and bake in the oven for 10 to 12 minutes, or until the croutons are golden brown. Turn once during baking.
 
this is my favorite summer recipe:

drive to the grocery store in a really air-conditioned car
stand inside the freezer door for about 10 minutes
scoop up about 20 pints of godiva chocolate ice cream
run home and sit under the ac.

:p:p:p That's my kind of recipe.:)
 
What about baked tomatoes? Just slice them in half, sprinkle some breadcrumbs, cheese and seasoning on top and put them under the broiler for a couple of minutes. Nice, easy and yummy!!
 
How about this dip for fresh fruit? It tastes like an Orange Julius!

Orange Fruit Dip

6 ounce can frozen orange juice
1 1/4 cups milk
1 small package Instant Vanilla Pudding
4-6 ounces Cool Whip

Dissolve orange juice in milk, add the pudding and mix well. Fold in cool whip and chill.

Serve as a dip for fresh fruit.



Last nite we had caramel and apples for dessert and DH and DD ate all of it and the rest of the apples today. It's been over 100 here, I guess the fruit was cool and refreshing!
