for some of the tastings we have done on DCL, people have sat in on them. For example I may participate in the Martini one and my husband can sit with me. Maybe it depends on where it is, the size of the room and who hosts.
Perhaps there may be a no-show & then you could pay & participate if that's what you would like
I was at Mixology on the Dream last summer, and the class was completely full, but one extra person showed up, explained he couldn't get a reservation but just wanted to see if they could add him, and the bartender squeezed him in and added an extra glass for each tasting for him. I thought he was crazy to show up without a reservation but I guess it paid off. They just gave him a bill with a room charge for the cost of the tasting.
So no guarantees, but why not give it a try?
Of course, your first step should be to go to the tasting desk as soon as you get on board and ask them if they have room available. There are sometimes openings on board even if there are none online in advance of the cruise.
I'm not sure what the PP meant by "tasting deck", but on embarkation day you can check either with guest services or at the location listed in the Navigator for tasting class sign ups. On the Fantasy, the location for sign ups is La Piazza (or it has been on prior cruises). My experience has been that there are often spots available in the classes even if they show up as sold out online.
It's "new" as of sometime during 2017. I know that some limited ones were first available around our silver booking window in early August 2017. They have added a lot since, but it seems there are still more added once on board.

If you don't find what you want in advance, definitely look once on board. Also, I think some of the rarer ones are only offered on board. I like being able to at least book something ahead of time. It makes planning easier.
And always keep checking. Our cruise is over a month out and I've been stalking the champagne tasting. I booked the one spot that popped up, then a few days later a second spot opened up. Good luck!
We were a party of 6 adults and could only get 5 tickets to Mixology online. Once we boarded, we were able to add the 6th person at La Piazza (we were on the Fantasy). It was our first stop after boarding the ship.
