I can’t find this anywhere.

1-can you online check-in if not physically at the hotel?

2-once checked in do you have to actually enter your room?

I might be using a “throw away” room to get the early entry and early ADR benefits. Worth the one night fee to me to get these Disney benefits while staying offsite.

You won’t get any real ADR benefits, you will only be able to book for the one night you are there. Anyone can book at 60 days out. The benefit to staying on site is you can book 60 days out plus 10 max. But since you are only planning on one night, it doesn’t help. You can probably get away with it. If you do early entry (30 minutes), you will already be in the park before they figure out your room was vacant. If paying for one night for 30 minutes of early entry for one morning is worth it, that’s up to you.
 
Oh interesting. I thought ADRs were at 30 days. I also have a leading reservation to enable booking ADRs at 60+10. After which I planned to shrink the hotel stay from 11 to 1 night. But perhaps if all can book at 60, I can just cancel the reservation and not lose the ADRs.
Not sure if that works anymore, meaning booking extra nights then canceling most. Kind of dishonest.

You would get 2 days. I did this once with a campsite. You could be getting in late for a number of reasons so they won’t cancel your room, at least on the first night. I even used online room checkout the next day and received an email with my receipt.
