I just came back from the 4/19 Eastern Magic. I took the Galley Tour. It was very short, about 15-20 minutes and you get a freshly baked chocolate chip cookie. It is described as a self guided but one of the Chefs from Palos walked with us through the kitchen. The tour took place on Thursday (one of the at sea days), about about 3:45pm between lunch and dinner so there was no one in the kitchen, but it was all stainless steel and very clean. It was interesting to see where our meals are prepared and I enjoyed it. You also get to ask the chef any questions you had about food preparation, storage, crew meals, etc.
It was surprising the number of questions people had about the crew quarters and their meals.
