OKW Fishing

I've read that when you book a fishing guide at WDW, the fishing is "catch and release". However, does anyone know, if you fish in the canal at OKW (or other places), are you allowed to keep the fish you catch (according to Florida size limits - I'm sure the local Walmart will have a fishing license). If so, I assume that if you rent a pontoon boat, that you can fish other places and keep the catch -- right?

Hey now, I grew up eating cypress-water Florida fish. MMmmmmmmmmm - love that freshwater Bass.
