Welcome April!!!!
I just found your trip report and I am so excited that you are going in May. That is when I will be going too and my DH and I will be volunteering at GKTW for a day during our trip! May 9 to be exact. You're the first MAW trip person on the DISboards that I know of that will be there during the trip, so it makes me super excited that I might get to meet you and precious January. What an incredible amount of obstacles she has overcome!
Anyway, I'm excited to hear all the fun plans you have for your trip!
Our fav parts for each park
MK: The magic/atmosphere of each land - for the kids, the castle and fantasyland are a must, but be sure to visit pirates (unless the kids are incredibly frightened by the dark) and buzz lightyear (even if they can't figure out how to shoot, its still fun) and monsters inc laugh floor (family fun)
HS: Toy Story Mania! - By far, our most favorite part. But we also love the shows here, Beauty and the Beast is a must for your little princess, but the show is 40 minutes long.
AK: The safari is by far my favorite. If you and DH are rollercoaster people, Everest is awesome, but for the kids, I would recommend the Lion King Festival show, its a very fun, but shorter show.
EP: Test Track! - But for your kids, I would recommend Innoventions. It'll be a great place to cool off and the kids can do all kinds of hands on type stuff without much wait (think science center/children's museum). Also, the Seas with Nemo and Friends. Very gentle ride with lots of fun visual effects.
Fav places to eat
MK: Overall, MK comes last in our preference for eating. We try to go to a nearby resort to eat instead (the monorail makes it easy to get to the Polynesian for a nice lunch break away from the crowds)
HS: Staring Rolls Cafe has the most awesome sandwiches, hands down! For a sit down restaurant, try Mama Melrose. We haven't been yet, but we're going on our trip. Its italian food and I can't wait to try their flatbread.
AK: Another one we don't each too much at - but we have had a table service at Yak and Yeti. It is a bit more expensive, and I don't think I would recommend it over any of the more fun atmosphere/kid friendly places. I hear that the Tusker House character breakfast is a lot of fun! Counter services places here aren't my fav, but there is Flame Tree BBQ that gets pretty good reviews.
EP: Best gourmet type food in WDW is here with all the different worlds having a unique table service place, but if you're needing a lunch break, go to Sunshine Seasons. Located inside, with a lot of seating, this counter service location has a variety of food, drinks, and desserts for breakfast lunch and dinner (oh wow...that sounded like a tour guide book...yes, I've been to SS a few times!)
