Try the Hampton Inn, Maingate West, off of Hwy 192. We were last there in December 2004 for around $60-$70 per night. Room with two queen beds, microwave/refrigerator. Complementary breakfast with hot items (sometimes eggs/sausages, sometimes pancakes or french toast), fresh fruit, lots of juice, milk, coffee, muffins, donuts, bread with toasters to use, etc. They serve fresh chocolate chip cookies with milk in the evenings.
There was a pool but I don't know if it was heated as we didn't swim.
There is a back road that takes you to the Animal Kingdom area of WDW in about 5-10 minutes so you don't have to venture out onto 192 or I4 to get to WDW.
We first stayed when they were quite new, in the late 90's, and really liked it a lot. It is starting to get a little bit worn, but is still a great value and the staff are friendly. The generous breakfast offering is worth quite a bit if you are a family (it's just DH and me but was great to not have to go out to breakfast).
The location can't be beat for offsite. I think you get to WDW as fast as you would from many of the onsite resorts (as long as you have a car). If you don't have a car, they do provide a shuttle but I would hesitate to depend on this and don't recommend stayinig offsite without a car.
