The final week of December is a school holiday in most of Europe and therefore more expensive.

This was at the cheapest hotel, Santa Fe. The difference is bigger with the Disneyland Hotel.
The booking tool is acting up, so can't provide proper screenshots, but with the Disneyland Hotel it can be a couple of 100 price difference per person for the cheapest days in December vs. the most expensive days.
Now I must say that price difference is probably more noticeable in December. As the beginning of December can basically be low(er) season than the final week, which is the busiest time of the year.
