I think we have met, not 100% sure.....when are you guys going??? I am soooo jealous. Sucks being broke.

JOJO here - I am going to DL 2nd weekend in March looks like a 1-dayer. Not going to WDW until December. Well, last week in November. Gonna go do Tokyo Disney last part of March early April.

How's Dallas today? We got upper 60's, clear and sunny. Finally. :sunny:

Just picked up new kitty kat :cat: He is sleeping his neuter surgery off.

Gonna go get the mail and do some laundry. Maybe mix up a batch of weed killer and go to war in the yard! :thumbsup2

Oh yeah - and figure out what to make for dinner. :headache:

Re-nee - Chicken Slatinbocca turned out DELISH! I made the risotto with baby peas...YUM!

Did I tell you I am starting to take my lunches everyday..I was spending $10 a day for lunch and the portions were WAY too much! I feel better and I am losing weight...wish my swelling would go down so I could wear normal clothes..Oh well..maybe by the time the swelling goes down, I will have lost enough to need new clothes!!! :banana:

Johnna....here is the chicken recipe...cause I know you would like this!!

6 (3-ounce) chicken cutlets, pounded to evenly flatten
Salt and freshly ground black pepper
6 paper-thin slices prosciutto
1 (10-ounce) box frozen chopped spinach, thawed
3 tablespoons olive oil
1/4 cup grated Parmesan
1 (14-ounce) can low-salt chicken broth
2 tablespoons fresh lemon juice
Place the chicken cutlets flat on the work surface. Sprinkle the chicken with salt and pepper. Lay 1 slice of prosciutto atop each chicken cutlet.
Squeeze the frozen spinach to remove the excess water. Season the spinach with salt and pepper. In a small bowl, toss the spinach with 1 tablespoon of oil to coat.

Arrange an even, thin layer of spinach atop the prosciutto slices. Sprinkle the Parmesan evenly over each. Beginning at the short tapered end, roll up each chicken cutlet as for a jellyroll. Secure with a toothpick.

Heat the remaining 2 tablespoons of oil in a heavy large skillet over high heat. Add the chicken and cook just until golden brown, about 2 minutes per side. Add the chicken broth and lemon juice, and scrape the browned bits off the bottom of the pan with a wooden spoon. Bring the liquid to a boil. Reduce the heat to medium. Cover and simmer until the chicken is just cooked through, about 8 to 10 minutes. Transfer the chicken to a platter. Simmer the cooking liquid over high heat until it is reduced to about 2/3 cup, about 5 minutes. Season the cooking liquid with salt and pepper, to taste. Remove toothpicks from the chicken. Drizzle the reduced cooking liquid over the chicken and serve immediately.

Hey, Martha....just closed a great Pampered Chef show - earned enough to pay for Ryans portion of a cruise!! :cool1: There still may be hope we'll cruise again.... When you booked for? Is it near my Birthday...? 9/18? Maybe I could swing that with my mom. You taking your mom again?? We could do the mother/daughter cruise!!

Oh and Martha - Can you meet me at WDW in November - week after Thanksgiving? Neil will be at a conference/trade show at the Orlando Airport convention center. Probably stay there for the first few nights while he is "working" and then move over to an onsight hotel. I could be convinced to drive down and see ya - if you promise me a pedicure appointment. Ryan and I love the pedicures! :Pinkbounc

yes...mom and I are on the 9/30..it is REALLY cheap ...We have a Cat 10 and it is like alittle more than $2300

PLEASE COME!! Your mom and my mom could hang...Tink and Kate could hang...you and me could SPA!!!!

Don't know about November..I think I am pushing it by going in September...he is really wanting to put money into our IRA's
 
According to what SueEllen says, it doesn't look real good for getting a cat. 1 for a Med. cruise either, so now I prolly gots to figger out another cruise to go on! Since concierge deposits are no longer refundable, I have no choice but to go on another Disney cruise at some point. Oh well, you do what you gotta do! :teeth:
