We know you'll have a wonderful vacation no matter which way you decide but our vote was POP and POFQ.
We've stayed at one moderate - CBR - and found it to be a great experience for us. I think the moderates are perfect for families because they have stuff for both the adults and the kids... I felt like there was more of a balance between what the kids want (great pools, arcade, play areas, beaches, bikes, boats, disney themes, etc...) and what parents want (you can find quiet spots if you want, they're a little bit closer to things, hot tubs, quieter food court, etc....).
I think no matter how you go you'll have a great time, but if you're thinking about cost as a concern (as it is most of us) don't feel like you'll be missing out on a lot of luxury by doing moderate instead of deluxe. At the moderates the pools are wonderful, the buses are convenient, the rooms are comfortable, and the disney magic is everywhere. You can still go visit the Poly for dinner, electric light show, etc... but your children won't remember how much you spent on the room, instead they'll remember the great time you had as a family (without you worrying about every $.) You'll have a wonderful time at POP and POFQ! When they're older take them to the Poly or CR and they'll truly appreciate it.
