NYE - offsite...what's the real deal??

I'm getting so much conflicting info! We plan to stay in Indian Creek 12/26-Jan 1. I've read all about they crowds and I'm a good planner. I've used the crowd calendars to choose my park days. I expect crowds. I decided to do 12/30 MK and 12/31 EP. I've read that Epcot hasn't reached capacity since the 90's so getting in shouldn't be an issue (but some say it will). I've also read that with in park ADRs I can get into a park with up to a phase 3 closure (but some say this isn't true). I'm not naive (but I am kinda frugal), I expect lines on or off site and don't want to spend $1000's extra to stay in a tiny room onsite. Please help!
 
Sorry, what are your specific questions? where to stay? what to expect? Where to eat?
12/30 & 12/31 are absolutely insane with crowds but on 12/30 you usually can see a dress rehearsal of the the NYE fireworks at MK and Epcot from what I understand.
 
I'm not sure what your question is, either. Given the ever increasing crowds, it's possible for either or both of those parks to reach closures on those dates. But I think, historically, only MK has ever reached level 4 ( closed to everybody).

I've been to Disney twice for NYE and as long as you are cool with the crowds (which it seems you are) then you'll have a blast!! Both years we did what you are planning to do...12/30 MK and 12/31 Epcot. There are DJs and parties in most, if not all, of the countries at Epcot on NYE. So much fun!! We didn't have issues getting into the parks, although I think we got there in the early part of the day.
 

As for staying off site, I wouldn't think it would be a big deal??? You might hit traffic getting into/out of the parks but the lines at the gates will be crowded no matter where you stay. We stayed on-site for both of the NYE trips so I don't have much insight into the car traffic.
 
We have been there for NYE and 4th of July when staying off site. I did make ADRs because I too had read that would help us if the initial closure levels were reached. I made lunch reservations since I believe the documentation I read said they let you in an hour before your ADR. Both times it did not matter because there was no closure when we arrived.
