Nutritious things for back-to-school breakfasts.....ideas?

We start school again on Sept. 6th and I am trying to add more variety and nutrition to what I have on hand for the kid's breakfasts.

I just baked up a double batch of banana bread to freeze. My kids, like many, will not touch the obviously healthy things like bran muffins, but if you have any ideas or recipes for nutritious breakfast items that real kids will eat, please post them here. I'm sure I'm not the only mom wondering about this.

PS- I have a large chest freezer, so baking ahead and freezing is something I like to do. All kid-tested recipes will be welcomed!
 
I used to make little pancakes or crepes and freeze them and then zap them for a few seconds and then either pancake syrup or fruit ........

Also I make an awesome eggmuffin sandwich taht takes only as long as the toaster for the english muffin to cook.......I take one small armour sausage and put it in microwave for a minute in some water......drain water and then cut it up in smaller pieces......add one egg and scramble it around the sausage and put back in mic for 45 seconds......when muffin comes out of toaster I put a small slice of cheese on it and then half the egg on one side and the other side with the rest of the egg.....cut in half and the kiddos love this.......
I have made french toast also and froze that......

Also, a few hings we do.
1.)Breakfast banana splits using a banana, yogurt in any flavor, and cereal of choice. Cheerios, granola, honey bunches of oats work really well on this.

2.)Using a pancake make an egg/sausage sandwhich with cheese.
3.)A pancake wih PB and J and a banana and OJ
4.) make a breakfast quesadilla using two tortillas, scrambled egg, cheese, veggies and/or meat
5.) do an onlne recipe search for breakfast cookies. I came across these from a foody group on yahoo. Not sure which one...sorry!

My daughters like cheesy eggs!

Spray a coffee cup with non-stick spray or oil ( I use oil in a spray bottle)
crack an egg in it and salt and pepper then break the yolk
cover mug with plastic wrap and poke with a fork so it can breathe
microwave for 1 minute
turn out onto plate and top with a piece of american cheese or sprinkle with grated cheese

Very easy!

Pumpkin bread is always a hit with my kids!

Yogurt topped with ganolo and fruit

I make french toast sticks (just slice the bread up) and freeze them. I give them real maple syrup instead of Mrs. Butterworth's or something so it's not quite as bad for them with all of the preservatives and refined sugar, but it is still a treat!

Milkshakes with yogurt instead of ice cream. I need to try this one, but I read that you could freeze the yogurt and then make it w/ choc. syrup and milk. Not any worse than letting them have chocolate milk for breakfast.

And when all else fails........ Cheerios!
 

Thomas' makes little 100% whole grain mini bagels. Putting peanut butter or cheese on one of those would make a decent breakfast along with some fruit.
 
This recipe for Baked Oatmeal is terrific. It still has plenty of fat and sugar, but it is not as bad as Fruit Loops and still has some redeeming qualities, such as fiber and protein (and fruit if you add the raisins).

Baked Oatmeal

1/2 C melted butter

1 C brown sugar

2 Beaten eggs

3 C oatmeal

2 tsp. Baking powder

1 tsp. Salt

1 C milk

1/3 C raisins


Combine all ingredients and bake at 350° for 40 minutes in a buttered/greased casserole dish. Tastes great with a bit of milk pour over it. Really yummy. Worth the time to make.

I made up something similar to the above and froze them. I basically made breakfast burritos using one tortilla, warm it slightly before filling with your choice of ingredients. We typically just use eggs and bacon and then roll them up, individually wrap in saran wrap and then put in freezer bags. Pull out one in the morning and heat in micro for approx 45 seconds and voila! Good for kids and moms on the go in the morning.
 
Is there a thread somewhere for nutritious snacks to send in their backpacks? That is always a hard one for me too!
 
Here are two of our favorites..

Banana Burrito

Take a soft tortilla shell, spread it lightly with peanut butter. Roll it around a peeled banana.

Ham & Cheese Roll-Ups

Take a soft tortilla shell, put ham and shredded cheese in it. Nuke it for about 10 seconds or so.
 
I have a recipe for super-healty breakfast burritos...they're also amazing.

6 egg whites
2 eggs
4oz grated cheddar cheese
4oz reduced fat sausage, cooked and drained.

Scramble eggs, when they are almost done, add sausage. Spread mixture into 4 flour tortillas and cover with cheese. Wrap them securely in plastic wrap (individually), and freeze. In the morning, you can just nuke them for about 50-60 seconds, remove from plastic wrap and place on a paper towel. It's a very easy, high-protein breakfast.

Bagel spread with cream cheese (you may want to try the mini- bagels so as to avoid waste, sugar snap peas, box of raisins
Tortilla rolled up with a slice of mild cheese, fresh green beans, small tangerines (Clementines are so easy to peel that the kids can do it themselves)
Banana bread spread with peanut butter and a little honey, cucumber coins, melon cubes
Cream cheese and apple butter on whole grain bread, veggie mix (baby carrots, snap peas), dried apricots
1/2 pita stuffed with shredded carrot and mild cheese (or peanut butter), small individual cup of applesauce
How about using the following chart to mix and match from? Select one from each group. Bread :

Pita (either the small individual size or half of a regular round)
muffin
quick bread (banana, pumpkin, apple, etc)
whole wheat bun
bagels
tortillas
raisin bread
Fillings:

peanut butter plain or with: (pick one) honey, banana, jelly, shredded carrot, raisin
cream cheese plain or with: (pick one), jelly, apple butter, mixed with shredded veggies

If you're kids like yogurt here's a good one-I eat it every morning. It's quick,easy and very nutritious, 1 non fat yogurt (flavor your choice) and mix 1/3 cup of uncooked whole grain oatmeal in it. My college age dd puts it in a disposable coffee cup and eats it on her way to class. Has all the ingrediants of a healthy breakfas-protein, calcium, fruit and complex carbs. I thought it sounded gross when I first heard about it-but it's good.

I use a Back to Basics Egg and Muffin Cooker to make my own "egg mcmuffins." Courtesy of my fitness boards buddies. I use soy sausage while the kids like regular sausage or bacon. They sell it at Target and places like that. Here is a link: http://www.eggandmuffintoaster.com/eggandmuffin.html

I also have a Magic Bullet blender that I use to make shakes and smoothies.

I also eat yogurt with mueslix and my kids like to add fruit, too.

grlpwrd.....do you really like your magic bullet blender? I have seen those advertised but wasnt sure if I wanted to spend that much $$. I have a $20 smoothie blender that is defective..HA! So I know I need to replace it. Thanks!

I have one...I love it!!! It is definitely not as good as a food processor, but for smoothies or "adult beverages"...it is really awesome!!!

Yes, I agree - it's definitely not as good as a food processor or VitaMix, but it's easy and wonderful for fast smoothies, slushies, and shakes. Yum!

I bought mine at WalMart.
