I made all my reservations for 3 but now it's just going to be 2 do I need to call and change the reservations??

You should call and try to change your reservations. At most places, there won't be a problem showing up with fewer people than you originally booked, but freeing up one spot may open availability for someone else trying to book. So, it's not necessary, but it would be polite.
 
That ONE seat may be the difference between Suzy Parkhopper getting a ressie for dinner for a family of 4 or not. One seat can make a huge difference sometimes.
 
As supersnoop said, you can call and try to modify your party size, but if there are no tables available for parties of two, you may not be able to modify the reservation. If that happens, just keep the ADR for the larger party size and let the CM at check in know the correct party size. As long as someone shows up for the ADR, you will not be charged the no show fee for the guests that cannot make it.
