I have a question regarding tickets. I purchased 6 day park hoppers for our upcoming October trip but I think I would like to upgrade at least one to an AP. Is that possible?

Yes, but you must do it on site - at one of the 4 major parks or ar one of the Guest Relations offices in Downtown Disney.
