Non-parent watching the kids

Going to WDW in a few weeks with my cousin and her set of twins (22 months at the time of travel). Is there anything we should do ahead of time to prepare for the "in case of emergency" situation where my cousin would become incapacitated and I would have to be responsible for the twins? I'm just thinking some sort of paperwork or something. I don't want to go all crazy, but in the event that something happens, I'm thinking we should be somewhat prepared.

Note: I highly doubt that anything will happen, as they are all young and healthy.

Is there anything else that all of you wise parents out there can think of that we need to consider?
 
Are you from the US? If so then I would say no.
She I'm sure will have their insurance cards on her, and if they needed emergency medical treatment you could get that for them. There is no need for anything else. You don't really need paperwork like that except to take children out of the country or something like that.
 
If the parent is traveling with you I would not set up a consent by proxy for you to address medical issues for the children. That would, in my opinion, be unnecessary. In the event of an emergency where she is incapacitated and the twins also need medical attention ERs will still have to treat and stabilize regardless of her ability to consent and in such an emergency situation like that I would expect the other parent or another close caregiver would be joining before more serious decisions would have to be made.

When my kids were little, we used forms that summer camps had parents fill out as our guide. Both parents signed and we got it notarized - your bank should have a notary you can use (our was free).
No matter how healthy we are we never know what could happen so being prepared is always a good thing:).

Just to point out these are for when you are leaving your child in the care of someone else (either they are vacationing without you or you are vacationing without them). If the parent is with the children on the vacation this is unnecessary.

I believe the two documents mentioned in the article would cover any scenario including the one the OP specifically asked. Should any downloaded form be overly broad I would cross out any overeaching section and have all signers intial the excised portions just like what is done on a real estate contract. Or write a notarized letter that states what you want it to say exactly:).
