Non-meat (counter service) mexican food??

I have looked through the menus on WDWIG but have come up empty. Is there any non-meat mexican food, like nachos or bean burritos, anywhere at WDW?? Everything I have seen contains meat, even the child's meal burrito contains meat. Are we out of luck??
 
I follow your posts closely because I too am a vegetarian...I find it more difficult..(as I'm sure that you have as well)..to find vegetarian options at many counter service restaurants...(with the exception of those that offer veggie burger alternatives, etc)...
as far as Mexican alternatives...I had no luck at the counter service place in Mexico...with the exception of a request for plain nacho chips...(have to tell you...the guacamole was EXCELLENT)...you should stand a better chance at the sit down restaurant..make your dietary requirements known upon ordering....of course....you always need to be concerned about the refried beans...but you already know this....and rice...seems that it just can't be prepared without chicken broth..:(
The only thing I can say is........the guacomole is excellent..but I've already said that;)

The Cantina, the Mexico counter service place at Epcot, has a veggie taco salad, basically it has black beans, cheese, lettuce, tomatoes. Just ask for the veggie taco salad, which is their regular taco sald minus the meat.

El Pirata y el perico, at the Magic Kingdom in Adventureland, has nachos you can order with out the chili, that comes with tomatoes, green onions, jalapenos, and cheese.

There aren't any counter service Mexican places at MGM or Animal Kingdom.
