If you were going to Orlando with a 7 and 5 yo (well the 7 yo will turn 8 while there), what is there to do other than Disney/US/Sea World type stuff.

Gatorland, Orlando Science Center, Mini-Golf.

There is also the largest McDonald's play area down there.

What else...take a hike through one of the nature preserves. Airboat ride?

WonderWorks, in Pointe Orlando, gets rave reviews from people I know with kids in that age range.

Skip the McDonalds with the world's largest playland, tho--dirty, poor service, not worth the hype.
