They are pretty good at getting the park hours out 6 months in advance on the Official web site. You can also look at last years hours for a suggestion of this years hours. Even when they are published 6 months in advance they are subject to change, and very likely some will change as it gets closer.
Curious. Why would this be a problem? Unless you're planning on eating at 7am or after 10pm, the restaurants are all posted ( http://www.wdwinfo.com/wdwinfo/dining/disneydining.cfm ) on here with times and dates for breakfast, lunch and dinner. Why do you need to know when the parks open to make ADR's? Am i missing something or am I just not getting it? Maybe it's too early?!

This is a problem because I don't know what parks i will be at on which days. I like to avoid EMH's at all cost so until I know EMH's I don't know what parks I will be at.

We always plan which park which day first, based on hours, EMH etc, then we decide where we will eat. In that way we make our ADR's either in or near the park we will be in that day. It is best to minimize "running aruond" to get to your ADR's.
