No Park Days

Yes to the movies, not sure about the s’mores. Movie wasn’t every night when we went in October, just select nights. That may be different now. Check out the camping board for Fort info.
The movies seem to be every-other night during the week and then weekends. I didn't see any s'mores. :(
 
Horseback riding at Fort Wilderness is one of our favorite things to do, and reasonably priced. (note, this is different than the pony rides, you actually go on a trail by the cabins). When we were done we caught the bus to Triple D Ranch. We saw the fancy gear for Cinderella's ponies at the Christmas party, babies, and the Headless Horseman's horse. (he's not always there. We've recognized him in cavalcades at MK). That horse is freaking huge.
 
As others have noted, if you are on-property:
Disney Springs
Resort Hopping via the monorail & Boats (again, enjoy the ride)
Resort Hopping via the Skyway (same as above)
There are so many walking trails

Hotel Pool
Disney resorts often have other “hour long” type things. Making Tie-Die shirts for example

If you can go off property (you have a car, or are willing to do ride share)
Other major and minor theme parks in Orlando Area
Outlets (especially the Disney Character Warehouse)
There are even some dinner shows (look for groupons)
Boat rides (We did Boggy Creek Airboat a year ago, I think it was an hour ride, and included lunch when you returned)
A million “Tourist” things on International Drive

Along those same lines, sometime you just want to catch a meal outside of the Disney Bubble, for environment or economic reasons.
 

We have a no park day planned and a no park morning on our Epcot day.

For the full no park day, we are planning on sleeping in and then swimming, napping, and dinner and shopping at Disney Springs in the evening. For the no park morning, we're going to sleep in and have a TS or character breakfast. We are hoping the Princess breakfast is back at Trattoria al Forno, but we'll plan to have breakfast there either way and then head in to Epcot.
