I will be trying to make a Fantasmic Blue Bayou pkg for October 21st in a few days. I have been looking at September and earlier October dates just to get an idea of availability, and I can't find one date with a BB dining pkg available. Are they really all gone? Do they go the first day they are available? How fast?

By my calculation your booking window will open in just over 35hours.
Yes, they really are all gone. They are extremely popular right now with it only showing on Sat / Sun nights for your visit.
I booked for 9/30 - I checked in the lead up when they were becoming available and it was 3am PST online. Phone lines open at 7am.
There was a delay with loading the 10/1 - probably due to switching to October - so they weren't available at 3am, maybe the next day but now I think they are generally releasing at that time as each day becomes available.
Lucky for me I am in Aus and 3am PST is 6pm here which is a much more reasonable hour!
As far as I could tell there were still bookings available in the next 2-3hrs after I booked but there are no guarantees, particularly if you want a specific time - I wanted a 5.30pm reservation. They are usually gone within a few hours from what I am seeing for the 'desired reservation' times. You might see something available for ~ 7.40pm for longer so it depends what time you would prefer.
I see people recommending you need to get them at the 60day mark at the moment but personally, if at all possible, I would be trying to get them as soon as you can when they open up (usually 3am PST) I don't know EXACTLY how long they are lasting but its not long.
Best of luck with whatever you do : )

A few weeks ago, I was able to get a reservation at 6 am PT the day reservations opened up for my date, but they were gone soon after that. Do remember that, if you can't get a reservation, keep checking back, even the actual day you are in DL. People drop reservations all the time. Admittedly, we have a reservation for two different nights just in case our flight is delayed, the show gets cancelled, someone in our party gets sick, etc. There's nothing like paying $65 for a dinner someone feels too sick to eat because they ate a turkey leg and a churro earlier in the day, lol. We plan to eat a light lunch and healthy snacks that day for that very reason. If all goes well the first night, we will cancel our second reservation the day before. I imagine we aren't the only ones who do that.

We are looking at getting the Blue Bayou dining package for Saturday Oct 28, so I have also been keeping an eye on how fast they sell out. Reservations become available at 3am pst, and I have seen that most times are still available around 5am pst when I am getting ready for work. When I look later around lunch time, most of the times have disappeared. By evening they are just about all gone. So, if you want reservations make sure to get get up and get them early on the day they are available.

Thanks everyone. That is crazy how fast it is selling out. I will book at 3am pst.

And like others said keep checking back constantly and especially days before.
I originally only could find an 8:50pm BB for Sept. 16th and it was after packages were released but one day while checking on my lunch on the website I was at able to grab a 4:40pm, so never hurts to check several times a day!
