Of the 3 resorts your considering, I would definetly go for POFQ too. It is much smaller and will be easier for you and your mom to get around. If your mom likes thing more upscale then POFQ is a very nice choice in the moderate catergory. I like the lacy wrought iron work around the buildings, it adds an air of elegance to the resort and the rooms are very nice too. Plus, you can hop on the boat to DTD. I hope your mom comes through radiation with flying colors!
 
I've been to POP and POFQ, not Coronado. If those were my choices, I would choose POFQ. I like the intimacy of POFQ compared to the expansiveness of other resorts. If being close to the food court/lobby-buses-parking lot/ pool/laundry is important make sure to request that and I see nothing wrong with explaining your mom's situation.
