Not sure about Nick but we've used Honey Suckle Beach Rides-Grand Cayman and we had an amazing time.

Really nice horses and the beach was gorgous. Penny was our guide, she is the owner as well. Sweet lady, american who's been in Grand Cayman for quite some time now. She's a doll!
